In our application, when you click the Save As option in a report, the drop-down list includes many options that do not work or should not be valid options, such as SYLK, WKS, Dbase 2, etc. Is there a way to limit the Save As options to only those we want to show?

Yes, using the Windows API to hook the call to the Save As common dialog and customizing it before it's shown to the user.  I did an article on that for PBDJ a number of years ago:

The link posted is still current, but I find that the sys-con servers can be a little bit unreliable, so you might be unlucky and find that they just happen to be down when you attempt to access the article. Try again at a later time, or use google to search for the URL and view one of the cached versions of the article (e.g. http://webcache.googleusercontent.com/search?q=cache:Les0pgBcD0wJ:pbdj.sys-con.com/node/508046+&cd=3&hl=en&ct=clnk&gl=nl)

OIC.  Not sure I trust the google cache to be available long term either.  So what I did is submit it to the web archive.  It will be there:
